What a POS must solve in fast food

A fast-food operation has three bottlenecks: the queue at the register, the queue in the kitchen and the confusion at handover. The register queue is spread out with self-service kiosks — customers enter their own order and the cashier handles only payment and handover. The kitchen queue becomes visible through the KDS. The confusion at handover is solved with an order number display: the customer watches for a number rather than listening for a name.

On the menu side the deciding factor is combo logic. A meal is several products brought together by rules: a main is chosen, a side and a drink come from a list, and some choices change the price. If those rules are not defined in the POS, the cashier adds three items separately every time and corrects the price by hand — which is both slower and error-prone. In HMS POS combo groups are defined, the cashier opens the meal with one tap and the options are asked in sequence on screen.

Volume rises but the error rate does not — and in fast food that is exactly where the difference lies.
