In a single venue most of the gain is in service speed: ordering at the table, instant delivery to the kitchen, fast bill closing. At two or three venues the problem shifts from speed to consistency; the menu and prices must match everywhere and the reports must read side by side. In a chain the real issue is standardisation: a new branch must be able to copy the setup, and franchisees must see the same screen as head office.
