What is a KDS? What a kitchen display does
KDS stands for Kitchen Display System. In short: the screen that replaces the paper ticket and shows each order to the right station in the right order.
The three problems it solves
A kitchen running on paper repeats three problems. The first is delivery: somebody has to carry the ticket to the kitchen, and at peak that carrying is delayed. The second is distribution: the hot dish, the salad and the drink on one order belong to different stations, and on paper the chef makes that split. The third is sequence: which order fires first depends on how the slips happen to be laid out.
A KDS solves all three. The order lands on the screen the moment it is confirmed at the register — nothing is carried. Items are split by their defined station — the system distributes. The queue is ordered by arrival time and preparation time is tracked by a counter — a late order changes colour.
How station routing works
Every item is tied to a station the moment it is defined: grill, cold kitchen, dessert, bar. When an order is confirmed the system splits the items by that definition and each station sees only its own work. Nobody has to ask whether a salad belongs to the cold section — the screen has already put it in the right place.

Why preparation time should be measured
Everybody feels it when the kitchen slows down, but nobody knows by how much. A KDS times every order; the average preparation time shows up in reporting, its distribution by hour can be pulled out, and the station that is slowing can be identified. Without that measurement every improvement is guesswork — the numbers tell you whether to simplify the menu, add a pair of hands, or just fix the sequencing.
