What a POS must solve in a bar

In a busy bar order time is measured in seconds and the bartender cannot free a hand to search a screen. So a bar layout is built differently from a restaurant one: the best-selling drinks sit in fixed positions, the bartender taps a memorised layout instead of searching, and quantities increase with a single gesture. The seconds come from the layout, not from the bartender’s memory.

The second issue is shrinkage, the most expensive line in a bar. Counting bottles is not enough; the 50 ml inside a cocktail has to come off stock with the sale. With recipe-based stock, every cocktail’s ingredients are defined down to the millilitre, deducted on sale, and at close the real level in the bottle can be compared with the level in the system. Once the gap is measurable, shrinkage becomes manageable.

Comps and voids are the most common route for shrinkage in a bar. Both require permission, are recorded with a name and time, and are totalled separately at close.

Bar shrinkage comes more from imprecision than from bad intent: an over-pour, a comp nobody recorded, a tab left open. Each is small on its own and large by month end. Recipe-based stock makes the gap between what was sold and what left visible every day, while permissions and the audit log show whose hand the comp or void came from. It becomes something you can discuss by looking at numbers rather than accusing anyone.
