POS setup for a cloud kitchen
A cloud kitchen has no dining room; all it has is the channels orders come from and the single kitchen that answers them. So the entire operation lives on a screen.
What a POS must solve in a cloud kitchen
The cloud kitchen model is to serve several virtual brands from one kitchen: one brand sells burgers, another chicken, a third desserts — all cooked on the same range. Here the POS’s first job is to separate the brands and its second to unify the kitchen. Whichever brand an order comes from it must land on the same kitchen display, but its label must carry the brand name; otherwise brands get mixed up at packing.
The second issue is measuring profitability per brand. Two brands produced in the same kitchen can share ingredient costs while carrying different commission rates and separate ad budgets. To see which brand actually pays, sales, ingredient cost and commission all have to separate by brand. A business that looks at one combined revenue figure hides a loss-making brand behind a profitable one and does not notice for months.

What changes in this business
Four things that matter in a cloud kitchen
Brand separation
Each brand is defined with its own menu, prices and marketplace accounts; the brand name appears on the order label so packing does not get mixed up.
One store, separate recipes
Ingredients are managed from one store while each brand keeps its own recipes, so the same chicken can sell in two brands at different portions and different costs.
Brand profitability
Commission rates are defined per brand and channel, net contribution is calculated for each brand, and a loss-making brand cannot hide.
Capacity management
When the kitchen fills up, prep time is extended across channels or a brand is paused, which prevents cancellations and bad reviews.
Do you really know which brand is making money?
In a cloud kitchen launching a brand is cheap, which is why many operators run four or five. But a brand being easy to launch does not make it profitable. One can produce high revenue and still lose money after commission and discounts. To see that you have to look not at revenue but at net contribution per brand: sales minus ingredient cost minus commission minus campaign discounts. HMS POS produces that calculation broken down by brand and channel.
